A deliciously decadent cake that sings to you! The marriage of buttercotch, caramel and crunchy ferrero rocher is a match made in heaven! Looks fancy but its is deceptively simple to make..<br />

INGREDIENTS-<br />
For eggless chocolate cake-<br />
1 1/2 cups Plain flour<br />
1/2 cup Cocoa<br />
1/2 cup sugar<br />
1/4 tsp Salt<br />
1 cup Curd<br />
1 tsp Baking powder<br />
1/2 cup Oil<br />
1 tsp vanilla essence<br />
<br />
Combine oil, curd and vanilla essence. Sift together the flour, cocoa, sugar, baking powder and salt. Mix the wet ingredients into dry and combine well. Transfer batter to a lined pan and bake in a preheated oven (180deg C) for 40 minutes.<br />
<br />
For filling and topping-<br />
200gms Dark chocolate<br />
200gms Amul fresh Cream<br />
1/2 cup caramel syrup<br />
6 Ferrero Rocher pieces<br />
<br />
Bring cream to boiling point in a heavy bottom pan, tip in the chopped chocolate, cover and let chocolate melt, stir till thick. Your Chocolate ganache is ready.<br />
To assemble cake- Slice cake into half and slather with the caramel syrup, next spread some of the cooled ganache and sandwich with the other half of cake. Pour the remaining ganache on top and arrange the ferrero Rocher on top.<br />

With a sharp knife chop boneless chicken into bite size pieces, Dry roast and grind all the dry masalas together except for red chillies, marinate mutton pieces in about half head of garlic and 1 tsp dry masala, leave for an hour.Now after an hour, heat oil in a pressure cooker add the cumin seeds and let crackle, next add the garlic paste, marinated mutton and all the rest of the ingredients except vinegar, dry roast the mutton for 5 minutes then close lid and give 4-5 whistles, let pressure drop by itself, DO not add any water.Open the lid and on medium flame dry roast the mutton, stirring all the time and adding vinegar little by little, till oil leaves sides of pan , add salt, keep frying till totally dry.</div>

Method-<br />
Extract juice from the beetroot, should be about 1/2 a cup. Chop chocolate and place in a bowl.<br />
Combine coconut milk and cornflour and place over low heat stirring all the time.<br />
When slightly thick add in beetroot juice and let come to a boil.<br />
Pour the mixture on to the chocolate, cover and leave for 2 minutes.<br />
Whisk well till smooth and let cool.<br />
Spoon into ramekins/shot glasses and let refrigerate till set.<br />
Top with a salted pecan and a pinch of sea salt just before serving.<br />
Can be made 2-3 days ahead, stays good refrigerated.</div>

water in a heavy pan, till almost done, drain under running water, splash
a bit of oil on top to keep from sticking to each other.<o:p></o:p></span></li>
<li class="MsoNormal"><span lang="EN-US">Heat 1 tbsp butter in a pan on
low heat and sauté onions till soft, add ginger garlic and then tomato
puree, cook well till it starts leaving sides of the pan.<o:p></o:p></span></li>
<li class="MsoNormal"><span lang="EN-US">Add the vegetables into pan
along with ½ cup water and cook till veggies are tender.<o:p></o:p></span></li>
<li class="MsoNormal"><span lang="EN-US">On the other side make the
white sauce- heat a tbsp of butter and add flour, roast the flour over
low heat for a minute or so, tip in the milk stirring continuously so
that no lumps are formed.Let milk thicken, season with salt and pepper
and keep aside.<o:p></o:p></span></li>
<li class="MsoNormal"><span lang="EN-US">Once veggies are tender, add
macaroni to it and toss well, season with salt, pepper n oregano.<o:p></o:p></span></li>
<li class="MsoNormal"><span lang="EN-US">Take a serving dish and layer
white sauce at the bottom, spread out the macaroni on it and spoon the
cheese spread on top, garnish with chilli flakes.<o:p></o:p></span></li>

Its 12pm..I am at work and trust me I am bored..I take a
piece of orange colored paper and try to make a boat out of it, one of those
paper boats we used to make as kids, especially during the rains and let them
loose under rainy torrents. So I fold this way and that but I cant make the

Combine flour, wholewheat flour, oil, salt and knead into a
pliable dough with warm water.</div>

Let the dough rest for 1 hour</div>

Knead again and roll out into discs just like chapatis and
of the same thickness, stack and keep warm</div>

Heat oil in a pan and add ginger-garlic paste, followed by
onions, tomatoes, bell peppers, corn and the boiled beans, cook for 5-10
minutes till soft and dry.Add rest of ingredients and cook for a further 10
minutes. Keep aside to cool.Taste and adjust seasoning, at this point you can
add more chopped green chillies if you like it hot!</div>

In a large salad bowl combine all the ingredients for the
salsa and toss wel, taste and adjust seasoning.</div>

There have been <a href="http://www.wattpad.com/12005889-ode-to-cheesecake">odes </a>written about this irresistible dessert..who thought that it would be so easy to make!!Though for a lot of people a cheesecake simply means a huge number of calories, but in this recipe the calories are minimal, the fresh fruit in abundance..and the recipe really, really simple and easy to make.<br />
We liked it very much, the creaminess of the cheese offset by the acidity and tanginess of the strawberries,I will be making this throughout the Summer months for sure!<br />

the digestives with 2 tbsp powdered sugar till they resemble breadcrumbs.</li>

melted butter and press well with fingertips onto a springform pan.Level
with the back of a spoon, esp. along the sides.</li>

in the fridge to Chill well</li>

the curd in a muslin cloth till whey drips out( about 2 hrs).</li>

the washed and hulled strawberries with ½ cup powdered sugar.</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">Add
the thick curd to the strawberries and process for 2 minutes till smooth
and creamy.</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">Measure
out gelatin in a small bowl, add ½ cup room temp. water and place on top
of double boiler, for 8-10 minutes, till gelatin melts and turns into a
clear liquid, DO NOT stir.</li>

fresh cream till stiff peaks form.</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">To
the curd-strawberry mixture pour in gelatin and process for a minute till
well combined.</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">Lastly
fold in whipped cream lightly.</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">Pour
onto prepared <span style="mso-spacerun: yes;"> </span>chilled biscuit base</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">Leave
to chill atleast 2 hours or better still, overnight.</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">Run
a knife along sides of the set cheesecake to loosen, then remove base of
pan to release.</li>
<li class="MsoNormal" style="mso-list: l2 level1 lfo3; tab-stops: list 36.0pt;">Top
with sliced fresh strawberries/ macerated with sugar strawberries or
strawberry conserve/jelly , as desired.</li>

chilled.</li>

oven at 180C.</li>

and line a brownie tray/ Swiss roll tray or any large rectangular pan. It
is very important to line it either with greaseproof sheet or foil
otherwise brownies will stick to the pan.</li>
<li class="MsoNormal" style="mso-list: l1 level1 lfo1; tab-stops: list 36.0pt;">Break
chocolate roughly into large chunks with a rolling pin and add olive oil,
heat on low flame in a thick bottomed pan.</li>
<li class="MsoNormal" style="mso-list: l1 level1 lfo1; tab-stops: list 36.0pt;">Let
chocolate melt completely but on low heat and then let the mixture cool
down till warm to touch.</li>
<li class="MsoNormal" style="mso-list: l1 level1 lfo1; tab-stops: list 36.0pt;">Next
break the eggs one by one into the melted chocolate mixture and combine
well, now add the sugar and mix very well, it will turn into a jelly like
mass.</li>
<li class="MsoNormal" style="mso-list: l1 level1 lfo1; tab-stops: list 36.0pt;">Add
the flour, vanilla essence, baking powder, chocolate chips and salt and
combine thoroughly.</li>
<li class="MsoNormal" style="mso-list: l1 level1 lfo1; tab-stops: list 36.0pt;">Pour
into prepared pan and level, sprinkle walnuts on top.</li>

fish with salt and lemon juice for 2 hours or overnight. </li>
<li class="MsoNormal" style="mso-list: l0 level2 lfo1; tab-stops: list 72.0pt;">Heat
oil in a large flat bottomed pan, fry the fish pieces.</li>
<li class="MsoNormal" style="mso-list: l0 level2 lfo1; tab-stops: list 72.0pt;">Drain
with a slotted spoon onto absorbent paper.</li>
<li class="MsoNormal" style="mso-list: l0 level2 lfo1; tab-stops: list 72.0pt;">Make
a paste of ginger+garlic+green chillies+onion</li>
<li class="MsoNormal" style="mso-list: l0 level2 lfo1; tab-stops: list 72.0pt;">In
the same oil add the cumin and onion ginger garlic paste, fry for 2
minutes then add <i>deggi mirch</i> and tomato puree and fry very well on low
flame till it leaves sides of pan.</li>

add Tamarind, sugar, rock salt, <i>garam masala, ajwain</i> and lemon juice
along with ½ cup water and fish pieces.</li>

and cook for 10-15 minutes.</li>

with coriander leaves and serve hot with freshly steamed rice/ paranthas

Dijon mustard- 2 tbsp</li>

White wine vinegar- 2 tbsp</li>

Olive oil- 75ml</li>

METHOD-</div>
<ol style="text-align: left;">
<li>Top and tail the beans.<br />
Cover the head of garlic in foil and roast in the oven at 200C for 20 mins.</li>
<li>Heat plenty of water and plunge in the green beans, cook for about 2 minutes so that they are still crunchy.</li>
<li>Toast the almonds lightly in a pan.</li>
<li>Take out the beans from the boiling water and plunge under cold water so that they are verdant green.</li>
<li>In the same boiling water slip in eggs with a spoon, boil for 6 minutes, refresh under cold water.Drain, peel and keep ready.</li>
<li>Squeeze out the pulp from the roasted garlic and mash well, add all the other ing. for the dressing and mix well.</li>
<li>For final assembly-</li>
<li>In a large bowl, tip in the well drained beans, add the dressing and toss well, season. Slice the boiled eggs on top and sprinkle with the crunchy toasted almonds.Serve warm.</li>

Cottage cheese(paneer)- 250 gms</div>
<div class="MsoNormal">
Red and yellow Bell peppers (capsicum)- 1 each</div>

Onion- 2 (chopped into largish bite size pcs)</div>
<div class="MsoNormal">
Thick low fat Curd- 250gms</div>

Ginger+garlic paste(fresh)- 1 tbsp</div>

Garam masala- 1tsp</div>
<div class="MsoNormal">
Lemon juice- 1 tsp</div>

Finely chopped green chillies-1-2</div>
<div class="MsoNormal">
Mint leaves- a handful, finely chopped</div>

Coriander leaves- a handful, finely chopped</div>

Salt and pepper to taste</div>

Chaat masala to sprinkle on top</div>

Wooden skewers(soaked in water so that they don’t burn)</div>

<ul style="text-align: left;">
<li>Whip the curd well.</li>
<li>Add ginger+garlic paste, garam masala, lemon juice, green
chillies, garam masala, coriander, mint and salt/pepper to the whipped curd.</li>
<li>Cut paneer into largish squares and marinate in the above
mixture for 2 hours or overnight.</li>
<li>Cut onion and peppers into bite size pieces.</li>
<li><b style="mso-bidi-font-weight: normal;">Final assembly-</b></li>
<li>Take a wooden skewer , alternately thread the onion then the marinated
paneer, bell pepper, keep repeating, finishing with the onion in that order.</li>
<li>Grill/ Pan roast the skewers till brown and done.</li>
<li>Sprinkle chaat masala and serve hot.</li>

<li>Preheat oven to 200 degree C</li>
<li>Grease and flour two 9- inch cake pans</li>
<li>Cream butter and sugar together very well. Add eggs and beat
well.</li>
<li>Add the cocoa, food colour, salt, vanilla to the creamed
mixture.</li>
<li>Now alternately add flour and buttermilk, mix well, in the
end add the vinegar.</li>
<li>Pour batter into the prepared cake pans and bake for 30
minutes.</li>
<li>Cool completely.</li>

After having my fill of sweet , I got my hands on some small sour raw ones and decided to make a super quick, fresh, ready to eat pickle...so here goes the recipe...<br></p>

<p dir=ltr>Raw mangoes- 1 kg (washed and peeled)<br>
Mustard oil-1\2  cup<br>
Onion seeds (kalonji)- 1tsp<br>
Fenugreek seeds (methi seeds)-2 tsp<br>
Aniseed (saunf)- 2 tsp<br>
Turmeric powder-1 tsp<br>
White til- 1/2 tsp<br>
Sugar/ jaggery-2 tsp<br>
Whole red chillies-4-5<br>
Green chillies- 4-5 slit<br>

<p dir=ltr>Take the peeled mangoes and slice into small pieces. </p>
<p dir=ltr>Heat mustard oil in a heavy bottom pan and add mustard oil, after 2 mins, lower flame and add all the ingredients in the order listed.</p>
<p dir=ltr>Fry the spices for a minute.</p>
<p dir=ltr>Add the sliced mangoes, and mix well to coat evenly, cook for a minute.</p>
<p dir=ltr>Cool and transfer to an airtight container, keep refrigerated.</p>
<p dir=ltr>Will keep for upto 2 weeks.</p>

Can we leave indulging the sweet tooth behind? Todays recipe is perfect for misty monsoon showers...sweet, cinnamony, thick, buttery and warming...<br><br></p>
<p dir=ltr>Ingredients-<br>
8 slices white bread with crusts- cut in halves<br>
(Any type of leftover bread can be used)<br>
2 large tbsp soft yellow butter<br>
1/2 cup powdered sugar<br>
2 cups full cream milk<br>
2 large eggs<br>
A large pinch cinnamon<br>
A pinch of nutmeg<br>
Handful of raisins/ sultanas<br>
1/2 tsp vanilla essence ( optional)<br><br><br></p>
<p dir=ltr>Method-<br>
Butter the bread and arrange half of it in an overlapping way on to a buttered  ovenproof dish. Preheat oven to 180 C. <br>
In a large bowl combine eggs and sugar and beat well, slowly pour the milk and then the rest of the ingredients.<br>
Pour over the arranged  bread slices and cover with remaining buttered bread, pour rest of milk and egg mixture on top, bake for half an hour till browned and bubbly.<br>
Serve warm with clotted cream.</p>

Posting after almost an year..time flies, and what seemed like a tiny break stretched out to 365 days...Well guys lets get this rolling with a oh-so simple, ready in a jiffy recipe that is a roadside staple hence the name- Dhaba style chicken.<br />
Dhabas are little roadside eateries designed for the traveller in mind that offers fresh, spicy and possibly the most delicious food anywhere on the planet!<br />
Here's the way to simple comfort...</div>

<b><u>Ingredients-</u></b><br />
Fresh chicken-700-800 gms(small pieces, on the bone)<br />
Onions- 3 large, chopped<br />
Tomatoes-2 medium, chopped<br />
Ginger and garlic paste- 1 tbsp<br />
Green chillies- 2 nos, sliced<br />
Lemon juice- 1tbsp<br />
Pure desi ghee (clarified butter)- 6tbsp<br />
Coriander leaves- a large handful, chopped<br />
Turmeric powder-1 small tsp.</div>

Kasuri methi (dried fenugreek)-2 tbsp crushed</div>

<u><b>Whole spices needed</b>-</u><br />
5 cloves<br />
1 stick cinnamon<br />
Black cardamom-2<br />
Cumin-1 tbsp<br />
Green cardamom-2<br />
Whole red chillies-2</div>
<div dir="ltr">
<b><u>Method-</u></b></div>
<ul style="text-align: left;">
<li>In a heavy bottom pan or kadhai, heat the ghee and tip in the whole spices n onions.</li>
<li>Let the onions turn golden brown, then add the chopped tomatoes as well as the ginger garlic paste and turmeric, fry well.</li>
<li>Wash the fresh chicken pieces thoroughly and add to the fried masala, tossing all the time, cover and cook on a slow flame for half n hour at least, adding little hot water now and then, so that the masala does not stick,</li>
<li>Cook till the spices are fragrant and chicken is well cooked.</li>
<li>Sprinkle kasuri methi on top.</li>
<li>Tip in the green chillies and lemon juice and mix well, lastly add salt n black pepper to taste.</li>
<li>Garnish with fresh coriander and serve hot with tandoori roti or naans.</li>

¾ cup powdered sugar<br />
1 tsp vanilla extract<br />

2 tbsp powdered sugar<br />
2/3 cup sifted cake flour<br />
zest of 2 lemons<br />
reserved juice from the Cocktail fruit can<br />
<b>Vanilla Bavarian Cream</b><br />
5 egg yolks<br />
Vanilla custard powder-1 tbsp<br />
2/3 cup sugar<br />
1 ½ cups milk<br />
1 tbsp lemon juice<br />
Vanilla extract-1 tsp<br />
1 ¾ cups whipping cream<br />
<b>for filling and topping-</b><br />
1 can Cocktail fruit<br />
a handful of chopped toasted walnuts<br />
some mint leaves <br />
<br />
1.Preheat oven to 450F. Butter and flour the sides of large springform pan. Line bottom of pan with a
sheet of parchment paper cut to fit bottom pan exactly.<br />
2.Beat eggs, egg yolks, lemon zest and ¾ cup sugar together in a medium bowl until thick and light. Beat in the vanilla.<br />
3.In a separate bowl, beat the egg whites until foamy, add cream of
tartar and beat until whites begin to form peaks. Add the 2 tbsp sugar
and beat until the whites hold stiff, glossy peaks(do not over beat).<br />
4.Sift flour over the egg yolk mixture and fold in . Stir in one fourth
of the whites. Then carefully fold in the remaining whites.<br />
5.Spread batter evenly in pan. Bake until light brown and springy to
touch. Cool in pan 5 minutes. Run a knife along edge to
loosen.let cool. Cake may be
frozen at this point.<br />
6.To assemble cake: Slice cooled cake carefully into half and Center one layer of the
cake at the bottom of serving tray. Brush the cake with some of the reserved syrup to
just moisten(not drench) the cake; set aside.<br />
7.Prepare Vanilla Bavarian Cream. Immediately pour about half of the
Bavarian Cream over the first layer of cake in the pan, layer with half of the Cocktail fruit bits Set the next
layer of cake on top of the cream. Pour remaining Bavarian Cream over
cake and smooth top of the cream with spatula, top up with the remaining cocktail fruit arranged decoratively.Sprinkle chopped walnuts and add mint leaves.<br />
Prep Work<br />
Vanilla Bavarian Cream<br />
1.Combine egg yolks, custard and sugar in a bowl’ beat until light. Bring milk to
a boil in sauce pan. Pour hot milk into yolk mixture and stir with a
wooden spoon(it doesn’t say so but I would temper the egg mixture first
to be safe). Return this mixture to the saucepan and cook over medium
heat, stirring constantly, until your finger leaves a clear trail in
sauce when drawn across the back of the spoon.(Do not boil or mixture
will curdle.) Immediately remove from heat. Pour into a stainless steel bowl places over a bowl of ice
water. Stir in lemon juice and vanilla extract. Cool
over ice water, stirring occasionally, until mixture thickens to the
consistency of softly whipped cream.<br />
2.While mixture is cooling, whip the whipping cream until it
holds soft peaks. When cool, fold the whipped cream into the mixture.<br />

<b>Strawberry Bavarian Cream</b><br />
2 ½ tbsp unflavored gelatin<br />
1 ½ cups strained strawberry puree(1 ½ baskets)<br />
5 egg yolks<br />
2/3 cup sugar<br />
1 ½ cups milk<br />
1 tbsp lemon juice<br />
several drops of red food coloring<br />
1 ¾ cups whipping cream<br />
<b>Strawberry Mirror</b><br />
1 tsp lemon juice<br />
1 tbsp kirsch<br />
1 tbsp water<br />
1 tbsp unflavored gelatin<br />
Few drops of red food coloring<br />
<b>Strawberry Juice</b><br />
1 ½ pints of strawberries(18 oz)<br />
¾ cup sugar<br />
¾ cup water<br />
1.Preheat oven to 450F. Butter and flour the sides of an 11-by-17
inch jelly roll pan(rimmed baking sheet). Line bottom of pan with a
sheet of parchment paper cut to fit bottom pan exactly.<br />
2.Beat eggs, egg yolks and ¾ cup sugar together in a medium bowl until thick and light. Beat in the vanilla.<br />
3.In a separate bowl, beat the egg whites until foamy, ad cream of
tartar and beat until whites begin to form peaks. Add the 2 TBSP sugar
and beat until the whites hold stiff, glossy peaks(do not over beat).<br />
4.Sift flour over the egg yolk mixture and fold in . Stir in one fourth
of the whites. Then carefully fold in the remaining whites.<br />
5.Spread batter evenly in pan. Bake until light brown and springy to
touch(7 to 10 minutes). Cool in pan 5 minutes. Run a knife along edge to
loosen. Invert cake tin to cut out 8 ¼ inch circles of cake. Wrap the
cake layers, separated with waxed paper, and set aside. Cake may be
frozen at this point.<br />
6.To make soaking syrup: Combine water and the 1/3 cup sugar in
saucepan; bring to a boil to dissolve sugar. Cool to room temperature;
flavor with liqueur. Set aside or refrigerate in glass jar until ready
to use.<br />
7.To assemble cake: Brush sides of 10-inch springform pan lightly with
flavorless salad oil or almond oil. Cut out a cardboard circle that is
exactly the same size as the bottom inside of the pan; cover cardboard
with aluminum foil and fit into bottom of pan. Center one layer of the
cake bottom of pan. Brush the cake with some of the soaking syrup to
just moisten(not drench) the cake; set aside.<br />
8.Prepare Strawberry Bavarian Cream. Immediately pour about half of the
Bavarian Cream over the first layer of cake in the pan. Set the next
layer of cake on top of the cream. Pour remaining Bavarian Cream over
cake and smooth top of the cream with spatula. Refrigerate until the
cream sets(1 to 2 hours).<br />
9.Prepare the Strawberry Mirror.<br />
10.To serve: Wrap a hot towel around the outside of springform pan for a
few minutes. Run a small sharp knife tip around the edge of the
Strawberry Mirror to separate it form the sides of pan. Mirror will tear
when sides are unlatched if it is stuck at ANY point. Slowly unlatch
the pan and slide it off the cake. Slice cake in wedges and serve in
upright slices.<br />
Prep Work<br />
Strawberry Bavarian Cream<br />
1.Sprinkle the gelatin over the strawberry puree in a small bowl and set aside until spongy.<br />
2.Combine egg yolks and sugar in a bowl’ beat until light. Bring milk to
a boil in sauce pan. Pour hot milk into yolk mixture ans stir with a
wooden spoon(it doesn’t say so but I would temper the egg mixture first
to be safe). Return this mixture to the saucepan and cook over medium
heat, stirring constantly, until your finger leaves a clear trail in
sauce when drawn across the back of the spoon.(Do not boil or mixture
will curdle.) Immediately remove from heat and stir in softened gelatin
mixture. Pour into a stainless steel bowl places over a bowl of ice
water. Stir in lemon juice and a few drops of red food coloring. Cool
over ice water, stirring occasionally, until mixture thickens to the
consistency of softly whipped cream.<br />
3.White gelatin mixture is cooling, whip the whipping cream until it
holds soft peaks. When the gelatin mixture resembles softly whipped
cream, fold the whipped cream into the gelatin mixture.<br />
Strawberry Mirror<br />
1.Prepare strawberry juice.<br />
2.Place lemon juice, kirsch, and water in a small bowl. Sprinkle gelatin over this mixture; set aside until spongy and soft.<br />
3.Measure 1 ½ cups Strawberry juice into a small saucepan and bring to a
simmer; pour over gelatin mixture and stir to dissolve gelatin. Tint to
desired color with red food coloring. Place bowl over bowl of ice water
and stir occasionally until the mixture is syrupy and just beings to
thicken(do not let jell);this is really the tricky part, remove from ice water.<br />
4.When mixture is syrupy, pour a 1/16-inch layer over the top of cake. Refrigerate until set.<br />
Strawberry Juice<br />
Wash and hull strawberries; coarsely chop. Place strawberries in
saucepan; crush to start juices flowing. Place over low heat; add sugar
and water; simmer slowly 10 minutes. Pour juice and pulp through damp
jelly bag or cheesecloth-lined colander and drain into a bowl for 15
minutes(Do not press down on fruit).<br />

These have to be the ultimate in comfort food and are really quite delicious warm or cold, the only change I made from the original recipe was to add a hint of garlic... since garlic makes everything taste better, doesn't it???.<br />

Yield: 6 3-inch hearty knish, though you can make them any size you
please <br />
<u>Dough</u><br />
2 1/2 cups all-purpose flour<br />
1 teaspoon baking powder<br />
1/2 teaspoon table salt<br />
1 large egg<br />
1/2 cup vegetable oil <br />
1 teaspoon white vinegar<br />
1/4 to 1/2 cup water<br />
<u>Filling</u><br />
3 medium potatoes, boiled<br />
2-3 cloves garlic, chopped<br />
1 small onion, peeled and diced small<br />
1 tablespoon vegetable or olive oil<br />
1 tablespoon unsalted butter<br />
1/2 teaspoon table salt<br />
Freshly ground black pepper<br />
<u>To finish</u><br />
1 large egg yolk<br />
1 teaspoon water<br />
<i>Make dough:</i> Stir together your dry ingredients in the bottom
of a medium/large bowl. In a small bowl, whisk together the egg, oil,
vinegar and water. Pour it over the dry ingredients and stir them to
combine. Once the mixture is a craggy, uneven mass, knead it until
smooth, about a minute. Place the dough back in the bowl and cover it
with plastic wrap. Set it aside for an hour (or in the fridge, up to 3
days) until needed.<br />
<i>Meanwhile, prepare filling:</i> Pressure cook potatoes. Drain, then transfer to a large bowl to cool. <br />
Heat a large, heavy skillet over medium heat. Once hot, add butter
and oil and once they’re fully melted and a bit sizzly, add onions and garlic and
reduce to medium-low. Cook, stirring frequently, until deeply
caramelized, which will take about 45 minutes. Can you do this in less
time? Of course. But the flavor won’t be as intense. Transfer to bowl
with potatoes and mash together until almost smooth. Stir in salt and many grinds of
black pepper and set the filling aside. <br />
<i>Assemble knish:</i> Line a large baking sheet with parchment paper and preheat your oven to 375 degrees. <br />
If your dough has sweated some beads of oil while it rested, fear
not, you can just knead it back into an even mass. Divide the dough in
half. On a well-floured surface, roll the first half of the dough into a
very thin sheet, roughly in the shape of a 1-foot square, but really,
no need to be rigid about it. For moderate size knish (smaller than the
traditional “doorstops” but still hefty, about 3 inches across), create a
2-inch thick log from half your potato filling across the bottom of
your dough. Roll the filling up in the dough like you were rolling a
cigarette (which, of course, we would <i>never</i>), but not too tight. A
tiny amount of slack will keep the dough from opening in the oven. Keep
rolling until the log has been wrapped twice in dough. Trim any
unrolled length and add it to the second half of the dough; it can be
used again. Repeat the process with the second half of your dough and
second half of filling; you might have a small amount of dough leftover.<br />
Trim the ends of the dough so that they’re even with the potato
filling. Then, make indentations on the log every 3 to 3 1/2 inches
(you’ll have about 3, if your log was 1 foot long) and twist the dough
at these points, as if you were making sausage links. Snip the dough at
each twist, then pinch one of the ends of each segment together to form a
sealed knish base. Use the palm of your hand to flatten the knish a
bit into a squat shape and from here, you can take one of two approaches
to the top: You can pinch together the tops as you did the bottom to
seal them; indenting them with a small dimple will help keep them from
opening in the oven.<br />

<i>Bake knish:</i> Arrange knish on prepared baking sheet so that
they don’t touch. Whisk egg yolk and water together to form a glaze and
brush it over the knish dough. Bake knish for about 45 minutes, rotating
