CAKE! doesn't it bring back so many happy memories of past birthdays, Christmases ,celebrations and parties! It is simply amazing that with such simple ingredients such beautiful concoction's can be made, I have been baking cakes for the past maybe 12 yrs and i find nothing more calming or therapeutic.


Would like to kick start this blog with possibly one of my best recipes,this cake recipe is for keeps! It has a wonderful texture and a golden buttery flavor ,though it is quick and easy to make and the variations with this basic recipe are endless... you can even make beautiful cupcakes out of it!, as well as a fancy chocolate glaze cake(i have included recipe of that too).


Go ahead this is a complete fail proof gem of a cake.Here's the recipe- serves four

Ingredients-

  • Flour-3/4th cup
  • Powdered sugar-1/2 cup
  • Egg-1
  • Amul butter -50 gms
  • Vanilla essence-1 tbsp.
  • Baking powder- 1 tsp
  • Mixed nuts - 1/2 cup(almonds,raisins,cashews)
  • Milk-1/4th cup

Method

Cream butter and sugar together well till light and creamy,add the egg- it will look like a whitish-lemonish tinged batter ,you can use an egg beater or simply a wire whisk , continue beating really well for 10-15 mins.

Combine the flour and baking pwdr together and sieve, add half of the nuts to it reserving the rest for sprinkling on top,add the flour mixture to the butter-sugar-egg mix and mix lightly ,add vanilla essence and the milk till you get a smooth batter .

Line tin (I use a smallish size tin since this recipe yields a cake enough for four and there's just the two of us in the house,if you want a fairly medium sized cake go ahead and double the recipe) smooth the batter into the tin, sprinkle the rest of the nuts on top after dusting with flour ,be sure to shake off excess (don't be alarmed if the quantity of batter looks less to you,it rises well and double up as it bakes).Bake in pre-heated oven(180 C) for approx.35 mins or till top is golden and cake springs back when lightly pressed.

Go ahead and and have a piece hot!-melts in the mouth,golden ,buttery delicious!

For the Chocolaty Version of Nutty Butter Cake (chocolate butter cake)

Simply add a tablespoon of cocoa powder to the basic recipe and whoa! chocolate cake! to make it little bit more yummy and fancy -frost with this simple satiny chocolate glaze which will surprise even your fussiest guest

Ingredients for the glaze-

  • Butter (yellow)-2 tbsp
  • Flour- 1 tbsp
  • Confectioners sugar- 1/2 cup
  • Vanilla essence-1 tsp
  • Cocoa pwdr- 1 tbsp

Method-

Melt butter over low heat in a heavy bottomed pan,add flour and stir ,cook for 2-3 mins. so that rawness of the flour goes, quickly tip in the sugar and cocoa and drizzle the milk steadily while beating all the time with a wire whisk,you can take it off the fire when it turns into a fudgey ,truffle like mass ,add more milk if required if it turns too thick , remember it will thicken as it cools also.Cut cake in half spread the frosting inside and pour rest on top.Can be sprinkled with toasted almonds too if desired.

Hi Bindiya,
You are definitely an expert when it comes to baking...can you also post some cake recipes which do not have eggs in them...it would be a great help for people like me who do not eat eggs...thanks a lot..
