Cookies!, again! and if you have  had enough of my sinful, buttery pistachio cookies then do balance it out with this HEALTHY and most importantly SUGAR-FREE Apple-cinnamon-date combo, I am sure post diwali, these would be more than welcome!

This is a soft ,moist cookie, with the natural sweetness of dates AND honey and a dash of cinnamon flavor. I have used a combination of wholewheat and plain flour as well as apples to make it fibre rich.

(makes 1 dozen)

  • Dates- 1/2 cup (pitted and chopped)
  • Apple- 1 , chopped
  • Honey- 2 tbsp
  • Egg- 1
  • Wholewheat flour- 1 tbsp
  • All purpose flour- 2 tbsp
  • Baking powder- 1/2 tsp
  • Milk- 2 tbsp
  • Cinnamon- 1/4 tsp
  • Oil- 1 tbsp
  • Vanilla essence- 1/2 tsp
  • a pinch of salt

In a large bowl, combine all the ingredients together and mix well, drop teaspoonfuls onto greased baking sheets, bake for 15-20 minutes at 180 deg.C, till edges turn golden.

These are off to Chandrika for AFAM-Dates:

One doubt - Do we need to peel the skin off the apple for this?

Sagari November 15, 2007 at 7:40 PM

bindya looks you r a wonderfulll bakerr those lookkkk sooo yummyyyyy and i am not able to forget about your pistashio cookiess those lookss so beaitufullll

Bindiya November 15, 2007 at 8:51 PM

geeta- No you don't need to peel off the skin, because the skins of most vegetables and fruits have a lot of vitamins and in this case apple skin again has loads of fibre, and it is ALWAYS better to have the whole fruit.
sagari- Thanxxxx a lottt lol!

I LOVE this cookie! It's perfect for the health nut in me! It's easy to make, and don't feel bad after eating them... The fact that it uses natural sweeteners just makes me feel warm and fuzzy inside.
