QUICK COCOA FRUIT CAKE

I have been thinking of baking a fruit cake for ages, but somehow all the recipes of those gorgeous fruit cakes are so lengthy maybe really great for once in year kind of Christmas baking but what if you want a delicious fruit cake in a jiffy, this is exactly that kind of of Cake and the best part is that it keeps fresh for several weeks!

                                                   Quick Cocoa Fruit Cake

Ingredients-

  • Flour, sifted-1 1/2 cups
  • Sugar- 1 cup
  • Cocoa- 3 tbsp.
  • Salt- 1/2 tsp.
  • Egg- 1, well beaten
  • Soda- 1 tsp.
  • Butter(melted) / Refined oil- 5 tbsp.
  • Vanilla essence- 1 tsp
  • Milk- 3/4 cup
  • Vinegar- 1 tbsp.
  • 1/2 cup grated coconut
  • 1/2 cup chopped mixed fruit, dredged with flour

Method-

Take a large bowl and add all the ingredients, and mix together very well for 10 minutes.Preheat oven to 180 deg.C and bake for 45 mins. in a well greased and lined pan.

Cover immediately after removing from oven so that the cake remains soft, store in an airtight box.

This recipe yields one large cake, we really enjoyed it with Fruit Ice-Cream!.

Hey dearie...that's an awesome cake. Do you think I could avoid the coconut n still get the same results?? I have a quickbread (sweet tea bread)made n clicked. Will you allow me to send that to your event??

Shella- Yes you can definitely avoid the coconut and still get awesome results, and yesss! do send in that teabread to me!!

Rachel- I think it has some acidic reaction with the soda, which can make the cake rise similiar to an egg,in fact you can omit the egg in this recipe too just add a tbsp. extra of milk.

this cake looks delicious - I love the idea of making fruit cake without all the palaver - and chocolate improves everything - have got this on my to do pile as one easy way to use up some dried fruit left over from Christmas - thanks

Hi Bindiya,
I was looking for a quick fruit cake recipe, found yours, baked it without the coconut and the vinegar, and the result was yummy and appreciated by all in my family. Thank you.
