CRUNCHY PEANUT BUTTER COOKIES- Easy Step-by-step recipe

These are the perfect accomapaniment to your cup of Coffee,... crispy, crunchy, melt-in-the-mouth buttery goodness and so easy too! They are bound to become yours and your kids favourite too!! After all who can say no to protein packed cookies that are delicious and easy to boot!!
Here's the recipe-
Ingredients-
(makes 24)
  • Plain flour-140 gms
  • Soda-bi-carb- 1/2 tsp
  • Salt-1/2 tsp
  • Butter-115 gms (at room temp.)
  • Egg-1
  • Vanilla essence-1 tsp
  • Crunchy peanut butter- 250 gms
  • Sugar-165 gms
Method-
  1. Sift together the flour, soda and salt and keep aside.
  2. Cream the butter and sugar together until light and fluffy.
  3. Stir in the Peanut butter and blend well, stir in the dry ingredients.
  4. Chill till firm.
  5. Preheat oven to 180 C, Grease 2 baking sheets.
  6. Roll out teaspoons of dough into balls.
  7. Place on prepared sheets and with a fork, make a criss cross pattern as shown in pic.
  8. Bake till lightly coloured, 12-15 minutes.
  9. Cool on a wire rack.

CELEBRATING MY 200th POST WITH TENDER BUTTERMILK SCONES!


"I am happy and grateful that this is my 200th post and I hope to continue to post more in the coming days, months and years...I will not say that I never knew where time flies, I felt every moment of it, yes, everytime I cooked, baked, fried, everytime I created a setting for the perfect photo and everytime I sat down to write a post, I felt every minute of it...that is why there is so much of me all over these pages..."
Scones are an integral and traditional part of an English Tea though they are of Scottish origin, these tender, buttery bite-sized treats are delicious with clotted cream and jam.Buttermilk scones are salty and can be enjoyed split and simply buttered, with cream cheese spread, with jam or even on their own, dunked in a cup of sweet Tea.
The recipe below is from my favorite book-Complete baking by Martha Day
To make these you require-
makes 15
Ingredients-

  • Plain flour-200gms
  • Salt-1 teaspoon
  • Baking powder-1 teaspoon
  • Bicarbonate of Soda-1/2 tsp
  • Cold butter-4 tablespoon
  • Buttermilk-175ml
Method-
  1. Preheat oven to 220C.Grease a baking sheet.
  2. Sift the dry ingredients into a bowl.Rub in the butter with your fingertips till it resembles fine breadcrumbs.
  3. Gradually pour in buttermilk, stirring with a fork to form a soft dough.
  4. Roll out doug to 1/2 inch thickness and stamp out rounds with a 2-inch biscuit cutter.
  5. Place on prepared baking sheet and bakeuntil golden, 12-15 minutes.Serve warm or at room temp.
I ate three of these in one go, one fresh out of the oven, soft and meltingly tender, on it's own, the second warm and slathered with butter, mmm... and the third buttered and spread thickly with marmalade...delicious!

BLISSFUL ORANGE VANILLA BISCOTTI

These are my Early morning blissful SUMMER treat!, so good that I could eat a dozen!...a zesty flavorful and fruity biscotti, light and crisp and so refreshing in the hot Indian summer, perfect with some Lemon Iced Tea.
The basic recipe is same as I had posted before but sans the addition of nuts, I think I really like these since you can feel the texture all through, whatever that means :)
It's Sunday morning here and I am up bright and early, enjoying a batch of fresh, aromatic biscotti, baking has uplifted my spirits in a way that nothing else ever can!!
To make these you require (adapted from here)-
(makes 8 large ones and about 20 small bite size one's)
  • Sugar-1/2 cup
  • Butter(salted)-60 gms
  • All purpose flour-1 and 1/4 cup
  • Baking powder-3/4 tsp
  • Orange flower water/Orange flavor- a few dropS
  • Grated orange zest -1 orange
  • 1 egg
  • Pure vanilla essence-1/2 tsp
Method- Preheat oven to 180 C/350 F and line a baking sheet with foil/parchment,take granulated sugar in a large bowl and sprinkle rind on top, rub to moisten and leave for few minutes, beat in softened butter till light and fluffy.Add egg and essence and beat well for a few minutes.Sieve flour and baking powder together and add to the egg mixture, it will come together to form a soft, sticky dough.Flour your work surface and halve the dough, shape into two logs, 10 inches long and about 1 inch thick, shape with dampened hands and flatten a bit, gently place on baking sheet at least three inches apart and bake for 25 minutes, cool for 10 minutes then with a very sharp knife slice diagonallyand bake again for 15 minutes, transfer to wire rack and cool completely.Store in an airtight container.Enjoy over hot cups of coffee

ORANGE ALMOND BISCOTTI

"Biscotti", what a lovely name!, and I thought I could never make them, they *sounded* way too exotic, but all thanks to Vera I have a jar sitting on the table, all crisp, nutty and sweet and I just love them!
I took some to work and the reaction was unbelievable, everyone said that they tasted just like the one's you would get at the bakery, I was so happy and proud.This will definitely be my favorite baked goodie for all times :).
I decided to make a small quantity first with the ingredients I had, and then once I had got the hang of it, bake larger quantities, I also sliced one log diagonally and one into straight slices, which resulted in smaller biscotti.
To make these you require (adapted from here)-
(makes 8 large ones and about 20 small bite size one's)

  • Sugar-1/2 cup

PEANUT~BUTTER MAGIC COOKIES

Easy, easy, easy that is what I was chanting when I made these, I read the recipe somewhere, can't for the life of me remember where, but they stuck me as well, pretty convenient and with just 5 ingredients, the cookies were whirling all around my head, I wondered how they would turn out to be, cookies without flour??Can you believe it?? Get ready for some delicious magic!!...


Combine half cup peanut butter with half cup powdered sugar and half a beaten egg, mix well, I added a splash of vanilla and as a last minute indulgence a fistful of chocolate chips, shaped them into balls and baked at 200C for 20 minutes....that's it!

Ha! didn't I say magic!! No complicated steps, nothing to memorise, no butter, no flour in the fridge?.. don't worry impress your guests with these crunchy nibbles...

CRISP CHEESE FINGERS/BISCUITS

If you love cheese as much as I do, you will simply adore these...that coupled with the bite of fresh black pepper and I am floored! These biscuits are perfect with Tea/Coffee and are a fun snack to munch on, very addictive too, they are gone even before you realise it...


The basic recipe is the same as- Puff Pastry biscuits...from a scratch, all I did was grate some cheddar cheese on top and sprinkle some freshly ground pepper, baked them to a crisp (the aroma is heavenly as these bake) and enjoyed them with a cup of Tea, yummy!


Here I would also like to add that it is not at all difficult to make the Puff pastry, in fact it is really a breeze,and the texture is beautiful, do try these out-they will not let you down I promise...

SUGAR FREE OATMEAL COOKIES

Summer fruits have flooded the Indian Market and I just had a couple of luscious juicy lychees, my favorite fruit since I was a child.It is one of those fruits, out of which very few things can be made and tastes best left alone, yesterday Gagan got 2 doz. Mangoes, peaches,bananas, and of course lychees and the refrigerator is overflowing, in the same order I want to make- Mango cheesecake, peach crumble and banana bread...but hate to think that making all that means eating it too and last week's cheesecake is already jiggling on my hips!


I think I will pass all this up for some guilt free Sugar free oatmeal cookies, at least I will fulfill my cravings and feel like a good girl afterwards...???


Can I have a teensy weensy slice of cheesecake now :)???(little girl voice in me!)


OKAY, OKAY.. Gotta be STRONG and not give way to TEMPTATION...


I made these with Sugar free "Natura" (low calorie sugar substitute powder concentrate), which is basically Sucralose, a derivative of sugar, the advantage of baking with it is that it is heat stable which means you can cook or bake with it without any loss of sweetness.The bottle comes with a tiny spoon for measuring, and one tiny spoon is equivalent to 1 tsp natural sugar, the bottle contains 200 spoons of the powder, I like the taste better than any other sugar substitute.Here is the list of Ingredients-



  • Wholewheat flour-1 cup

  • All purpose flour-1/2 cup

  • Quaker Instant oats-1/2 cup

  • Butter- 4 tbsp.

  • Raisins- a handful

  • Vanilla essence-1 tsp

  • Sugar free natura- about 5 tiny spoons (measure with the spoon provided in the bottle)

  • Baking soda-1 tsp

  • Milk- as required


Method-


Combine all the ingredients in a large bowl, rub in the butter with your hands add as much milk as needed to knead into a smooth dough, shape into balls and flatten with the palm of your hads, place on foil lined cookie sheets and bake till golden brown on top..Enjoy with a cup of coffee for some guilt free snacking.


My friends at work loved these and so did my diabetic father-in-law, my husband tasted them and never noticed that I had used Sugar free!For me they win hands down as they are high fiber and low cal and most important thing they take care of my sweet tooth!

HEALTHY VEGAN CHOCOLATE GINGER COOKIES

The recipe for these cookies is adapted from Jugalbandi's Smart Sweets:Vegan Ginger-Chocolate Chip Cookies, do read up their post which highlights the numerous health benefits of these cookies before making these so that you feel really great, just like I did!.


I used the following ingredients( you can include or omit according to your preference and availability) I however omitted chocolate chips altogether since I was making this for a diabetic, they turned out very, very good...


Ingredients-



  • All purpose Flour-1 cup

  • Wholewheat flour-1 cup

  • Quick cooking Oats (ground to a powder in a coffee blender)-1/2 cup

  • Molasses-1/2 cup crushed

  • Baking soda-1 and 1/2 tsp

  • Cocoa-1 tbsp

  • Cinnamon-1/4 tsp

  • Fresh ginger- 1/2 tsp grated

  • Salt-1/2 tsp

  • Water-2-4 tbsp

  • Refined oil-1/3 cup


Method- Exactly the same as here

PUFF PASTRY BISCUITS...from a scratch!

I like to have somehing light and salty with my morning cuppa, and usually stick to bakery puffs or salted biscuits, have been looking for a good salty biscuit recipe for ages but believe me I have not been able to come across any, today I chanced upon Artisan sweets where what caught my eye was how to make puff pastry in 20 seconds!, now that got me thinking, no.... running to the kitchen that very instant, and boy was I pleased!, these were the best that I ever made, though not really puff pastry but some darn good salted bicuits.My dad-in-law is diabetic and he always says that I bake all sweet things and never something he can wholeheartedly enjoy, after a bite of these he was ecstatic!,


Do give these yummy little gems a try, they are well worth the effort I promise...AND no more bakery puffs for me, from now on I am baking my own!


I adapted from her Quick puff pastry recipe


INGREDIENTS-



  • Flour-2 cups

  • Butter/Shortening-150gms

  • Salt-1 tsp

  • Chilled water as required

  • Cumin seeds-as required

  • Carom seeds(ajwain)-as required

  • Egg white-1


Method-


Rub the butter into the flour till the mixture resembles breadcrumbs, add enough chilled water to knead into a smooth dough, let rest for 15 mins.Now roll out dough into a large rectangle, dusting the board and rolling pin with flour as required, fold from one side then the other to make a parcel, thus turning it into a smaller rectangle, keep repeating, refer to the tutorial by Artisan sweets and proceed , I wanted something quick, so after repeating this several times and refrigerating once in between, I finally rolled out the dough and cut it into squares with a very sharp knife, brushed with egg white, sprinkled half with cumin seeds and the other half with ajwain, left to chill for another half an hour, then transferred biscuits to a very hot oven(200C), bake for 20 mins. or till fluffy and golden, serve with tea/coffee.These can be sprinkled with sugar and baked like palmiers too for a sweet treat.

HEALTHY SAVOURY INDIAN CRACKERS-BAKED NOT FRIED!

All of you appreciated the previous change of In love with food, but I was experiencing some technical difficulties so finally I decided to design the header myself , and I am so excited by the outcome!, hope you like it as much!!...


I am always on the lookout for some healthy substitutes and since my father in law is diabetic I try and cook stuff that can be enjoyed by him, this is precisely such an innovation, a simple yet delicious savory snack!

Ingredients-

  • All purpose flour- 1 cup
  • Millet flour(bajra atta)- 1/2 cup
  • Wholewheat flour-1/2 cup
  • Gram flour(besan)-1/2 cup
  • Fresh coriander- a handful chopped
  • Green chillies-2 chopped
  • Salt to taste
  • Black pepper-1/4 tsp
  • Ajwain-1/2 tsp
  • Turmeric-1/2 tsp
  • Ghee- 2 tbsp

Method-

Dry roast the millet, gramflour,and wheatflour together. Combine the rest of the ingredients and with the addition of cold water knead into a stiff dough, roll out into thin sheets, cut into rounds sprinkle with sesame seeds if desired and bake in a preheated oven at 200 C, enjoy with a cup of hot tea! Keeps for several month's in an airtight container!

CHOCONUT COOKIES

Lately I have been having the mother-of-all cravings for CHOCOLATE, a lot of what I eat is ruled by these cravings, like my craving for this some time back...

I needed something sinfully chocolaty and fast tooo, now most of us would hit a big bar of chocolate at this very moment and be done with it, but I had something else in mind....

CHOCONUT COOKIES

These delectable cookies are sure to satiate the worst chocolate craving and are a breeze to make especially the glaze on top which sets amazingly well, I called it CHOCONUT because it has cocoa and nuts in the biscuit and chocolate on top, an interesting variation would be the addition of white chocolate or maybe coffee for the glaze.

The recipe for these cookies can be found here, just add about a half cup of chopped mixed nuts and 1 tbsp cocoa powder to the original, the recipe for glaze is also the same except for the addition of an extra tablespoon of milk to make it more satiny, simply spoon glaze over the cookies and let it set for a couple of hours on some cooking foil, if you are in a hurry to devour them ,like me...pop into the fridge for a couple of minutes :)

CHOCOLATE DIPPED COOKIES

Wishing all of you a very Happy Valentine's day!, a lot of us are celebrating it in a big way judging by the number of entries I received today for my event- MY FAVORITE THINGS- LOVE IS IN THE AIR (HEART SHAPED FOODS), so I too decided to declare my love (for food :)) and make these crisp, fun heart shaped cookies to enjoy over a cup of coffee with Gagan....

Makes 36

Ingredients-

  • All purpose flour-1 cup +1 tbsp
  • Castor sugar-1/2 cup
  • Butter-50 gms
  • Vanilla essence-1 tsp OR
  • Orange food colour and flavor- a few drops
  • Egg-1
  • a pinch of salt
  • 100 gms plain sweetened chocolate
  • Milk- 1 tbsp

Method-

Preheat oven at 180 C.Cream the butter and sugar together well, I do this in the small jar of my blender, add the egg, orange colour and flavor/ vanilla essence, salt and pulse for a few seconds in the blender itself, scrape out in a large bowl, tip in the flour and knead to a smooth, tight dough. Refrigerate for at least 1/2 an hour.

Roll out thinly and cut with a heart shaped cookie cutter, bake for 15 minutes.Cool.

While the cookies are baking ,break chocolate into a small bowl and add the milk, heat over a slow fire adding more milk if necessary to melt completely, dip half the cooled cookie in it or spoon over, let set for a few minutes, bite in...yummy!

BANANA BISCUITS (MANGALORE BUNS)

Ever since I saw these at Mahanandi, I was tempted to make them, and now I am glad that I have, they tasted exactly as described and turned out beautifully, like soft pillows, fluffing up like a dream one after the other and yes!, they are extremely addictive!

After reading up more about Mangalore buns on the net, I discovered that they are various different recipes for them with additions like curd etc., that they originate from the actual place Mangalore in South India, and that people are really crazy for them!

Indira is so right in describing them-"Honeyed fragrance and creamy sweetness of banana could be felt and tasted, but it would not over-power the taste buds. A good and fun snack."

mangalore buns I made a few minor changes to the original recipe like using vanaspati for frying instead of peanut oil and keeping the amount of cardamom powder the same, rest of the ingredients have been halved, still this recipe yielded about 15-20 small bites, they reminded me of Parle cheeselings where looks are concerned only bigger!!

Ingredients-

  • All purpose flour(maida)_1/2 cup
  • Ripe banana-1/2 (I ate the other half:)
  • Powdered sugar-1 tbsp
  • Ghee-1/2 tbsp
  • Cardamom powder- 1/4 tsp
  • Vanaspati/oil for frying

Method-

Mash the banana well add the sugar and rest of the ingredients except for vanaspati/oil for frying and knead into a tight dough.let it rest for an hour, then form into balls like chapatis and roll out exactly like a thin chapati, with a sharp knife cut into small squares,heat the oil/vanaspati in a kadhai and lower these one by one into the not so hot fat, be careful as they tend to burn easily.I found them similar to frying mathis i.e on a medium flame and little prolonged cooking, so that the fluff up and also to maintain the crispiness.Remove on paper towels and store in a airtight box.

FIG~ALMOND MELTING MOMENTS

An unusual name for a cookie but one bite... and you will completely agree, these are the most incredible melt-in-the-mouth cookies,probably one of the best and easiest I have ever made.The recipe is a total keeper and can be adapted to innumerable variations.My husband loved them,my in-laws loved them and so did I,would most definitely be baking these again.And will never be buying cookies from the bakery!:)

Ingredients-

(makes 24)

  • Butter-5 tbsp
  • Powdered sugar-1/2cup
  • Plain flour-1 cup
  • Vanilla essence-1/2 tsp
  • Baking powder-1/2 tsp
  • Dried figs-5
  • Almonds-10

Method

Cream butter well for a few minutes, add sugar and continue beating preferably with a hand blender,after a 2 minutes add the rest of the ingredients reserving some chopped figs and almonds for the top, shape into balls like below-

Bake at 180 C for 15 minutes or so till browned, remove from sheet ONLY when cool.Take a melting moment bite, enjoy!

A DATE WITH CINNAMON ~ HEALTHY SUGARFREE COOKIES!

Cookies!, again! and if you have  had enough of my sinful, buttery pistachio cookies then do balance it out with this HEALTHY and most importantly SUGAR-FREE Apple-cinnamon-date combo, I am sure post diwali, these would be more than welcome!

This is a soft ,moist cookie, with the natural sweetness of dates AND honey and a dash of cinnamon flavor. I have used a combination of wholewheat and plain flour as well as apples to make it fibre rich.

Ingredients-

(makes 1 dozen)

  • Dates- 1/2 cup (pitted and chopped)
  • Apple- 1 , chopped
  • Honey- 2 tbsp
  • Egg- 1
  • Wholewheat flour- 1 tbsp
  • All purpose flour- 2 tbsp
  • Baking powder- 1/2 tsp
  • Milk- 2 tbsp
  • Cinnamon- 1/4 tsp
  • Oil- 1 tbsp
  • Vanilla essence- 1/2 tsp
  • a pinch of salt

Method-

In a large bowl, combine all the ingredients together and mix well, drop teaspoonfuls onto greased baking sheets, bake for 15-20 minutes at 180 deg.C, till edges turn golden.

PISTACHIO COOKIES WITH ICE-CREAM

"A crisp, buttery cookie studded with pistachios and served with Ice-cream!"

That sums up this gorgeous combo, I am at a loss of words to describe the flavors , but they are so unique and delicious that you gotta HAVE IT TO BELIEVE IT!

All in all -highly recommended! have with Ice-cream(use flavor of choice-here I used store bought Cookies-and-cream ). The cookies are irresistible enough on their own, dip-dip-dip  them into garam masala chai and enjoy!

                    Pistachio Cookies with Ice Cream

Ingredients-

  • Butter- 1/2 cup
  • Confectioner's sugar- 3/4 cup
  • Egg- 1/2
  • Vanilla essence- 1 tsp.
  • All purpose Flour- 1 1/2 cups
  • Baking soda- 1/2 tsp.
  • Cream of tartar- 1/2 tsp.
  • Salt- 1/4 tsp
  • Pistachios- 1/4 cup (whole, unsalted)

Method-
Cream the butter in a large mixing bowl, gradually add the sugar and beat until light and fluffy. Beat in the egg and vanilla.
Combine the flour, baking soda, cream of tartar and salt. Add the flour mixture to the creamed mixture.
Shape the dough into one of the following ways:

Roll out the chilled dough and cut with cookie cutters.
OR: This is what I did- Form dough into logs 2 inches in diameter flatten into a squarish shape and slice 1/8 inch thick WITH A VERY SHARP KNIFE  when chilled ,bake for 7 to 9 minutes

MACAROON EGGS IN SPUN CARAMEL NEST

Ever since Jai and Bee announced the "Click" event I HAVE had this stellar recipe spinning in my head, but it took me a long time to put everything together,reason being -I knew I needed an absolutely FREE day and loads of patience to pull this together. A long time back I had entered this recipe in a Cooking contest ,the theme of which was-"EGGS" and it had won the first prize.

The "Coconut macaroons "as most of you must be aware of comprises mainly egg white and the recipe here makes them just the way I LOVE them -crisp on the outside and coconutty softness on the inside, the "NEST" is made up of spun sugar much like the candy floss that all of us {kids and grown-ups alike}love so much.

Making the "NEST" is slightly tricky , if you have no experience handling caramel  temperatures, but if you have even little experience, it will be easy.

Ingredients-

(for 14 bite size macaroons)

  • Egg white- 1
  • Sugar- 4 tbsp.
  • Flour- 1 tbsp.
  • Baking powder- 1/4 tsp.
  • Salt- a pinch
  • Dry grated Coconut-4 tbsp.

for the caramel-

  • Sugar -1/2 cup
  • Water- 4 tbsp.

Method-

for macaroons-

Preheat oven to 180 deg. C.Take egg white in a CLEAN bowl, start beating , add salt , gradually add sugar , the egg white will start to thicken and resemble heavy cream -

Tip in the rest of the ingredients and softly fold in with a large metal spoon. I am using mini muffin liners here so carefully put a small teaspoon into each liner, smoothing the top to make them resemble "eggs" :).Bake for 10-15 mins,cool.

For the "NEST"-

Now very carefully and with complete attention ,combine the sugar and water , place on stove, stir the mixture till sugar is completely dissolved, now bring to a rapid boil. Keep a small bowl filled with cold water ready, after few minutes of boiling the sugar syrup rapidly you will notice that it becomes very thick, and sticky and color changes to caramel brown, a drop of this syrup when dropped into the bowl of water should form into a firm ball, once it reaches this stage, remove and cool slightly.

After 4-5 minutes , when syrup is sufficiently cooled, take a round steel bowl and working carefully, dip a wooden spatula in the syrup, when you pull it out it will leave silken threads- keep wrapping these threads around the bowl, till it is completely covered.

Upon cooling the nest slides off easily, add macaroon eggs and they are ready to serve.Enjoy the macaroons with a cup of Tea/coffee, my hubby crushed 4 macaroons, added a scoop of vanilla Ice cream , sprinkled the caramel on top ,and was in Heaven on Earth in 5 sec. flat, (acc. to him) !

  This recipe and post is singularly the one I have put all my love, time and attention into till date(read almost 6-7 hours, about 60 pics and making the caramel 4 times !) but I LOVED EVERY MINUTE OF IT !!!
